Japanese Deba Knives
A deba is the Japanese fish knife: a thick, heavy single-bevel blade built to break down whole fish. Its weight and rigid spine cut through fish heads and small bones that would chip a thinner knife, while the sharp single-bevel edge fillets clean off the bone. It is the knife fishmongers and sushi chefs reach for first when a whole fish hits the board. Our range runs to 10 deba knives, from $169.95.

Deba knife facts
We stock 10 deba knives, from $169.95 to $689.95, in sizes from 150 to 180 mm and in right- and left-handed grinds. The thick single-bevel blade is built for fish: filleting, cutting through heads and small bones, and portioning. It is a specialist, not an all-rounder, so keep it off large bones and vegetables and store it dry to protect the carbon steel.
How to use a deba knife
Use a deba to break down a whole fish: cut behind the gills with the heel, then run the blade along the spine to fillet, letting the weight of the knife do the work rather than force. The thick heel chops through fish heads and small bones; the fine tip handles the detailed work near the belly. Keep the single bevel flat to the bone, avoid large mammal bones, and sharpen on a whetstone matched to the single-bevel edge.

Deba knife questions
What is a deba knife used for?
It is a fish knife for breaking down whole fish: filleting, cutting through fish heads and small bones, and portioning. The thick, heavy blade does work a thin knife cannot.
What is the difference between a santoku and a deba?
A santoku is a thin, light all-purpose knife for everyday prep; a deba is a thick, heavy single-bevel knife built only for fish and small bones. They do completely different jobs.
Can a deba knife cut through bones?
It cuts through fish bones and heads using its weight and thick spine. It is not made for large mammal bones such as beef or pork, which will chip the edge.
Are deba knives good?
For anyone who breaks down whole fish, yes. Nothing else fillets and portions fish as cleanly, though it is a specialist knife rather than a daily all-rounder.
